
Mexican One-Pot with Chicken & Pumpkin

Black beans | 1 can (200g) |
Diced tomatoes | 1 can (400g) |

Cilantro | 1 bunch |
Grated cheddar cheese | 120g |

Preparation:

Season the chicken strips with chili flakes, cayenne pepper, salt, and pepper. Heat a large pot with 3 tablespoons of olive oil. Fry the chicken strips until crispy.

Add the grilled pumpkin cubes, drained black beans, and diced tomatoes. Stir and cover the pot, let it simmer over medium heat for 10 minutes.

Finely chop the red onion and roughly chop the cilantro.

Stir the stew, taste and adjust seasoning with more pepper, salt, or chili flakes if desired.

Sprinkle the red onion, grated cheese, and cilantro on top and serve.
