Grilled pumpkin 450g
Chicken strips 450g
Cayenne pepper 1 tsp
Chili flakes 1 tsp
Black beans 1 can (200g)
Diced tomatoes 1 can (400g)
Small red onion 1
Cilantro 1 bunch
Grated cheddar cheese 120g
Salt & pepper

Preparation: 

  1. Season the chicken strips with chili flakes, cayenne pepper, salt, and pepper. Heat a large pot with 3 tablespoons of olive oil. Fry the chicken strips until crispy.

  2. Add the grilled pumpkin cubes, drained black beans, and diced tomatoes. Stir and cover the pot, let it simmer over medium heat for 10 minutes.

  3. Finely chop the red onion and roughly chop the cilantro.

  4. Stir the stew, taste and adjust seasoning with more pepper, salt, or chili flakes if desired. 

  5. Sprinkle the red onion, grated cheese, and cilantro on top and serve. 

  6. Delicious with Doritos or to fill wraps/tacos.
