Preparation:

Defrost the avocado slices, brown lentils, brown rice, and pumpkin cubes according to package instructions. Warm them if necessary.

Prepare the dressing by mixing yoghurt, olive oil, malt vinegar, paprika powder, curry powder, coriander powder, chili powder, minced garlic, minced ginger, chopped fresh coriander, salt, and pepper in a bowl.

Wash and chop the little gem lettuce into bite-sized pieces.

In a bowl, layer warmed brown rice as the base. Arrange cooked brown lentils, warmed pumpkin cubes, little gem lettuce, avocado slices, and pomegranate seeds on top.

Drizzle the prepared dressing over the poke bowl.

Garnish with fresh coriander leaves.
