Preparation:

Defrost the quinoa, sugar snaps, and pumpkin cubes according to package instructions. Warm them if necessary.

Slice radishes and cucumber thinly.

Cook falafel according to package instructions until crispy and golden brown.

In a bowl, layer warmed quinoa as the base. Arrange warmed sugar snaps, pumpkin cubes, sliced radishes, cucumber slices, and falafel on top.

Sprinkle roasted peanuts and chopped parsley over the bowl.

In a small bowl, whisk together olive oil, ras el hanout, honey, harissa, chopped fresh mint, salt, and pepper to taste.
