
Tabouleh with Grilled Cauliflower and Pomegranate

Couscous | 120g |
Greek yoghurt | 150ml |
Pomegranate seeds | 3 tbsp |
Chopped mint | 1 tbsp |
Chopped parsley | 1 tbsp |
Chopped cilantro | 1 tbsp |
Raisins | 3 tbsp |
springs onions (sliced into rings) | 2 |
Olive oil | 3 tbsp |
lemon juice | 2 tbsp |
Roasted and chopped hazelnuts | 3 tbsp |

Preparation:

Heat the cauliflower in the microwave or briefly fry it in a pan. Prepare the couscous according to the instructions on the package.

Mix the chopped herbs, raisins, and spring onions into the couscous. Season further with salt, pepper, olive oil, and lemon juice.

Place the tabouleh in a serving dish, top with the grilled cauliflower, and garnish with hazelnuts and pomegranate seeds.
